almond cake

we mix together egg whites with almond extract to give extra flavour, ground almonds, caster sugar and flour. put onto trays and add cherries/pear/rhubarb [depends on the season], top with almond flakes, cook in the oven whole then cut into 6 slices.

in service, we warm it up in the wood fire oven and serve it with a scoop of vanilla ice-cream.
