Mixed seasonal bitter leaves (treviso, tardive, radicchio, castel franco) dressed in a sherry vinaigrette with gorgonzola, pecorino Romano and pears.

the sherry vinaigrette is made using sherry vinegar, brown sugar, olive oil, garlic. all is mixed together and left a day to infuse.
