chocolate bun

we make a dry dough out of milk, butter, rye flour & water. We slowly emulsify this with whole eggs. Pipe it onto cast-iron trays and cover it with craquelin [which is a mixture of sugar, butter & flour] - this keeps the shape of the choux as it rises in the oven.

To order: filled with vanilla ice-cream, cremoso & blackberries.
