miso butter - Inoculated pearl barley koji with spores mixed with cooked dried broad beans, salt and water and then left for 3 months.
miso mixed with butter.

pork sauce – Shallots, garlic, mushrooms, black pepper, thyme, bay, white wine, pork bones, chicken stock.
