strozzapreti pheasant offal ragu

Pheasant offal sausage mix containing. Heart, liver, leg, breast mixed with pork fat, red wine & dextrose. The mix is cooked to order and emulsified with pasta water, butter and grana padano then finished with sherry vinegar & parsley.
