pork belly ribs

the ribs are steamed in the oven in sealed bags with pork fat, thyme, garlic and salt until the fat has rendered and the meat is tender. they are then grilled to order.

we make a puree by roasting seasonal fruit.

the grilled ribs are tossed with the puree, pork sauce, roasted sweet onions and fresh herbs.

the ribs are then plated with extra sauce made from the fruit puree and butter.
