raw cabbage & farro salad

seasonal cabbages from flourish farm or shrub provisions, thinly sliced raw.

we cook farro [gluten], the italian word for spelt, toss with the cabbage and a dressing made of sherry vinegar [sulphites], olive oil, shallots, garlic & thyme.

the salad is finished with shavings of 24-month aged parmesan.
