italian style sausage

we make our sausages from different animals. generally they contain Pork/beef/hogget/deer meat and pork fat, fennel seeds, chilli flakes, cayenne pepper, garlic, black pepper. 

they are served with their own sauce, made with Shallots, garlic, mushrooms, black pepper, thyme, bay, white wine, pork bones, chicken stock.

the Sausage is grilled to order over the charcoal grill.
