winter truffle tagliolini

tagliolini are a shape of long homemade pasta, not as think as angel hair, but similar.

we make a porcini stock by slowly cooking onion, garlic & chestnut mushrooms until they are soft, sweet and caramelised; we then add black peppercorn, coriander seeds, water, dried porcini and kombu [seaweed].

once the pasta is ready, we put in a pan the mushroom stock, butter, 36month old parmesan, salt + 2gr of white/black truffle shaved on top
