ziti alla genovese

ziti is a tubular eggless pasta. despite the name, it is a typical dish of the naples area.

the ragu is made with shoulder or leg pieces from the cow, cooked in onions & onion juice (2 times the quantity of onion to cow meat) so it gets the sweetness out of them.

add soffritto [celery, onion & garlic], tomato pure, white wine.
