chocolate tart

the chocolate tart is filled with caramel made with the leftover whey from our ricotta dish and 70 percent original beans chocolate cream. it is finished with senia oil and maldon sea salt.

the whey caramel is made by reducing the leftover whey by half then adding brown sugar and butter and cooking until it is a rich and thick caramel. the chocolate cream is a chocolate creme anglaise set in the fridge. the chocolate pastry is individually lined and baked in tartlet cases.
